  • 300 g Griechischer Joghurt (Vollfett)
  • 200 g Mandelmehl (entölt)
  • 3 large große Eier (Raumtemperatur) Use room temperature for best results.
  • 1 tbsp Backpulver
  • 1 tsp Salz
  • 1 tsp Knoblauchpulver (optional) Optional for added flavor.
  • 1 tsp Zwiebelpulver (optional) Optional for added flavor.
  • 2 tbsp Olivenöl (optional) For a creamier texture.

Method
 

Preparation
  1. Preheat your oven to 175°C and line a loaf pan with parchment paper.
  2. In a large bowl, combine almond flour, baking powder, salt, and garlic and onion powder if using.
  3. Stir in the Greek yogurt, then add the eggs one at a time, mixing until a smooth and thick batter forms.
  4. If using, gently fold in the olive oil for that silky texture.
  5. Pour the batter into the prepared loaf pan and smooth the surface with a spatula.
Baking
  1. Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  2. Let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For a delightful serving, spread with avocado, serve with soup, or toast with jam. Store in an airtight container for about a week in the fridge or freeze slices for up to 3 months.
