Preparation
- Preheat your oven to 175°C and line a loaf pan with parchment paper.
- In a large bowl, combine almond flour, baking powder, salt, and garlic and onion powder if using.
- Stir in the Greek yogurt, then add the eggs one at a time, mixing until a smooth and thick batter forms.
- If using, gently fold in the olive oil for that silky texture.
- Pour the batter into the prepared loaf pan and smooth the surface with a spatula.
Baking
- Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
- Let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For a delightful serving, spread with avocado, serve with soup, or toast with jam. Store in an airtight container for about a week in the fridge or freeze slices for up to 3 months.
