  • 2 cups gluten-free all-purpose flour Ensure it's a good quality gluten-free blend.
  • 1 tablespoon sugar Regular granulated sugar works fine.
  • 1 teaspoon salt To enhance flavor.
  • 1 packet (2 1/4 teaspoons) instant yeast Ensure it's fresh for best results.
  • 1/2 teaspoon xanthan gum Important for texture.
Wet Ingredients
  • 1 cup warm water (110°F) Warm to the touch but not too hot.
  • 3 tablespoons olive oil Can substitute with plant-based oil.
  • 1 teaspoon apple cider vinegar Adds flavor and helps with leavening.

Method
 

Preparation
  1. In a mixing bowl, combine the gluten-free flour, sugar, salt, instant yeast, and xanthan gum.
  2. In a separate bowl, mix warm water, olive oil, and apple cider vinegar.
  3. Gradually add the wet ingredients to the dry ingredients and mix until well combined.
  4. Let the dough rise in a warm place for about 30-45 minutes.
  5. Preheat the oven to 375°F (190°C).
Baking
  1. Shape the dough into small rolls and place them on a baking sheet lined with parchment paper.
  2. Bake for 15-20 minutes, or until the rolls are golden brown.
  3. Remove from the oven and let cool slightly before serving.

Notes

Store leftover rolls in an airtight container at room temperature for 1-2 days, in the fridge for up to a week, or freeze for up to 3 months. Reheat in the oven for 5-7 minutes before serving.
