  • 1 pound beef or chicken, cubed Choose your preferred meat
  • 2 cups mixed vegetables (carrots, potatoes, peas, etc.) Use a mix of your favorite veggies
  • 4 cups broth (chicken or vegetable) Chicken or vegetable broth works well
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Toasted garlic enhances flavor
  • Salt and pepper to taste Adjust seasoning to preference
  • 1 teaspoon dried herbs (thyme, rosemary, etc.) Feel free to use your favorite herbs

Preparation
  1. In a large pot, sauté the onions and garlic until softened.
  2. Add the cubed meat and cook until browned.
  3. Stir in the mixed vegetables and cook for a few minutes.
  4. Pour in the broth and add the herbs, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 30 minutes, until the meat is tender and the vegetables are cooked through.
  6. Serve warm and enjoy!

Notes

For extra flavor, don't rush the sautéing. This dish can also be made vegan by substituting meat with chickpeas or tofu. Serve with crusty bread for dipping. Store leftovers in the fridge for 3–4 days or freeze for 2–3 months.
