Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour Can substitute gluten-free flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips Can mix with other types of chocolate.
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed peppermint candies

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the softened butter, granulated sugar, and brown sugar until creamy.
  3. Beat in the eggs, one at a time, and stir in the vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture into the wet ingredients, mixing until just combined.
  6. Gently stir in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes until the edges are golden.
  2. Let the cookies cool for a few minutes before transferring them to a wire rack.

Notes

For best results, chill the dough for 30 minutes before baking. Store cookies in an airtight container for up to a week.
