Ingredients
  

For the Sweet Potatoes
  • 3 medium sweet potatoes Clean and cut into ½-inch thick rounds.
  • cup melted unsalted butter Use for seasoning sweet potatoes.
  • 1.5 teaspoons cinnamon Divided for seasoning and topping.
  • ½ teaspoon salt For seasoning.
  • ½ teaspoon pepper For seasoning.
For the Topping
  • cup maple syrup Plus 2 tablespoons for added sweetness.
  • cup chopped walnuts Chop finely for topping.
  • 1 teaspoon thyme For added flavor.

Method
 

Preparation
  1. Clean and cut the sweet potatoes into ½-inch thick rounds. Preheat your oven to 200°C (400°F).
Seasoning
  1. Mix sweet potato slices with melted butter, 1 teaspoon cinnamon, salt, and pepper in a bowl until well coated.
  2. Alternatively, place ingredients in a ziplock bag, seal, and shake until mixed.
Roasting
  1. Lay sweet potato slices in a single layer on a baking tray. Bake for 25–30 minutes, checking for tenderness.
Topping Preparation
  1. While the potatoes are roasting, mix maple syrup, chopped walnuts, remaining ½ teaspoon of cinnamon, and thyme in a bowl.
Final Baking
  1. Once sweet potatoes are roasted, sprinkle 1 teaspoon of the walnut mixture on each slice. Return to the oven for another 8–10 minutes.
Serving
  1. Let cool slightly before serving. Optionally, crumble feta cheese on top for added flavor.

Notes

These roasted sweet potatoes pair well with roasted meats and make a fantastic holiday side dish. For extra sweetness, drizzle more maple syrup before serving.
