- In a skillet over medium heat, brown the ground beef until fully cooked. Drain the excess fat.
- Add chili powder, salt, and pepper to the beef and mix well.
- In a separate pot, boil the sweet potatoes until tender, about 10 minutes. Drain and set aside.
- Serve the beef mixture in bowls, layering with the sweet potatoes and cottage cheese.
- Drizzle hot honey on top and garnish with fresh cilantro. Enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze the beef mixture for up to 3 months. Add a splash of water when reheating to keep moist. Can be served with tortilla chips for extra texture.
