  • 1 lb ground beef can use ground turkey as a substitute
  • 2 medium sweet potatoes, diced
  • 1 cup cottage cheese can substitute with Greek yogurt
  • 1/4 cup hot honey adjust for more or less heat
  • 1 teaspoon chili powder adjust for more heat if desired
  • to taste Salt and pepper
  • to taste Fresh cilantro for garnish adds freshness to the dish

Method
 

Cooking
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain the excess fat.
  2. Add chili powder, salt, and pepper to the beef and mix well.
  3. In a separate pot, boil the sweet potatoes until tender, about 10 minutes. Drain and set aside.
  4. Serve the beef mixture in bowls, layering with the sweet potatoes and cottage cheese.
  5. Drizzle hot honey on top and garnish with fresh cilantro. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze the beef mixture for up to 3 months. Add a splash of water when reheating to keep moist. Can be served with tortilla chips for extra texture.
