Rice Preparation
  • 2 cups basmati rice Rinsed and soaked
  • 4 cups vegetable broth or water For cooking the rice
Fruits and Nuts
  • 1 cup mixed dried fruits (apricots, raisins, cranberries) Add sweetness and texture
  • 1/2 cup slivered almonds or pistachios For crunch
  • 1/2 cup chopped fresh parsley For freshness and garnish
Spices
  • 1/2 teaspoon ground cinnamon Warm spice
  • 1/2 teaspoon turmeric For color and flavor
  • to taste teaspoon Salt Adjust based on preference
Cooking Fat

Method
 

Preparation
  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
Cooking
  1. In a large pot, heat olive oil or butter over medium heat. Add the soaked rice and toast for a few minutes, stirring occasionally.
  2. Add the vegetable broth or water, dried fruits, ground cinnamon, turmeric, and salt. Bring to a boil.
  3. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  4. Remove from heat and let it sit covered for an additional 10 minutes.
  5. Fluff the rice with a fork, then gently stir in the slivered almonds, chopped parsley, and optional pomegranate seeds.
  6. Serve warm or at room temperature.

Notes

Soak the rice for better texture. Try different nuts or fruits, and adjust spices to taste. For a kick, squeeze in lemon juice before serving.
