Preparation
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
Cooking
- In a large pot, heat olive oil or butter over medium heat. Add the soaked rice and toast for a few minutes, stirring occasionally.
- Add the vegetable broth or water, dried fruits, ground cinnamon, turmeric, and salt. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 10 minutes.
- Fluff the rice with a fork, then gently stir in the slivered almonds, chopped parsley, and optional pomegranate seeds.
- Serve warm or at room temperature.
Notes
Soak the rice for better texture. Try different nuts or fruits, and adjust spices to taste. For a kick, squeeze in lemon juice before serving.
