Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

- In another bowl, cream together the butter, granulated sugar, and powdered sugar until fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the butter mixture and mix until combined.
Baking
- Roll the dough into small balls and place them on the prepared baking sheets, flattening them slightly.
- Bake for 10-12 minutes, or until set. Allow cookies to cool completely.
Assembly
- Once cooled, spread jam or frosting on the flat side of one cookie and sandwich it with another cookie.
- Decorate the cookies with sprinkles or icing as desired.
Notes
Store in an airtight container at room temperature for 5-7 days or freeze for up to three months. Chill the dough if it's sticky before rolling. Try using different flavors of jam or adding mini chocolate chips for variation.
