Cookie Dough Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Filling and Decoration
  • 1/2 cup jam or frosting for filling Choose your favorite flavor
  • Sprinkles or decorative icing for adornment Optional, for decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and powdered sugar until fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture and mix until combined.
Baking
  1. Roll the dough into small balls and place them on the prepared baking sheets, flattening them slightly.
  2. Bake for 10-12 minutes, or until set. Allow cookies to cool completely.
Assembly
  1. Once cooled, spread jam or frosting on the flat side of one cookie and sandwich it with another cookie.
  2. Decorate the cookies with sprinkles or icing as desired.

Notes

Store in an airtight container at room temperature for 5-7 days or freeze for up to three months. Chill the dough if it's sticky before rolling. Try using different flavors of jam or adding mini chocolate chips for variation.
