Ingredients
  

Dough Ingredients
  • ½ cup ½ cup (113 g) unsalted butter, softened
  • ½ cup ½ cup (100 g) granulated sugar
  • ½ cup ½ cup (100 g) brown sugar
  • 1 large 1 large egg
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 cup 1 cup (125 g) all-purpose flour
  • ½ cup ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon ½ teaspoon baking soda
  • ¼ teaspoon ¼ teaspoon salt
  • ½ teaspoon ½ teaspoon espresso powder (optional) Optional for added depth of flavor.
Pink Dough Ingredients
  • ½ cup ½ cup (113 g) unsalted butter, softened
  • ½ cup ½ cup (100 g) granulated sugar
  • ½ cup ½ cup (100 g) brown sugar
  • 1 large 1 large egg
  • 1 teaspoon 1 teaspoon vanilla extract
  • cups 1½ cups (190 g) all-purpose flour
  • ½ teaspoon ½ teaspoon baking soda
  • ¼ teaspoon ¼ teaspoon salt
  • 2–3 teaspoons 2–3 teaspoons freeze-dried raspberry powder or pink food coloring Adjust for desired color.
Ganache Ingredients
  • ½ cup ½ cup (120 ml) heavy cream
  • ¾ cup ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon 1 tablespoon (14 g) butter (optional) Optional for a richer ganache.
  • Freeze-dried raspberries (optional)
  • Chocolate squares (optional)
  • Heart sprinkles (optional)
  • Melted white chocolate for drizzling (optional)

Method
 

Preparation
  1. Prepare each dough flavor separately: Cream together butter and sugars until fluffy.
  2. Add the egg and vanilla extract, mixing well before stirring in the dry ingredients.
  3. Chill both doughs in the refrigerator for about 30 minutes.
  4. Scoop the dough into balls and press a well in the center of each.
Baking
  1. Bake at 350°F (175°C) for 10–12 minutes.
  2. After baking, re-press the centers while the cookies are still warm. Let them cool completely.
Ganache Prep
  1. For the ganache, pour hot cream over the chocolate, stirring until smooth.
  2. Fill the cooled cookie centers with ganache and decorate as desired.
Serving
  1. Let the cookies set at room temperature or chill briefly before serving.

Notes

Store these cookies in an airtight container at room temperature for about 3-5 days. Refrigerate them for up to a week or freeze for up to a month. Reheat in the microwave for a few seconds to enjoy them warm.
