  • 1 cup blackberry balsamic glaze Store-bought or homemade
  • to taste Salt For seasoning

  • splash Olive oil For searing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Marinate the chicken breasts in blackberry balsamic glaze for at least 30 minutes.
Cooking
  1. Heat a splash of olive oil in a skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then sear them in the skillet for about 4-5 minutes on each side until golden brown.
  3. Transfer the chicken to a baking dish and pour the remaining marinade over the top.
  4. Bake in the oven for 20-25 minutes or until the chicken is cooked through.
Serving
  1. Garnish with fresh blackberries and thyme before serving.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for about 1 month. Reheat in the skillet on low heat to keep it juicy. For best flavor, marinate longer if possible. A pinch of red pepper flakes can add a delightful kick.
