Ingredients
  

For the marinade
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • to taste salt
For the sauce
  • 1 onion finely chopped
  • 2 tomatoes pureed
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1/4 cup fresh cilantro for garnish
For serving
  • to taste Naan or rice

Method
 

Preparation
  1. Marinate chicken pieces in yogurt, garam masala, cumin, coriander, turmeric, chili powder, and salt for at least 30 minutes.
Cooking
  1. In a large skillet, heat butter and oil over medium heat. Add chopped onions and sauté until golden brown.
  2. Stir in the marinated chicken and cook until no longer pink.
  3. Add pureed tomatoes and simmer for 20 minutes.
  4. Stir in heavy cream and adjust seasoning as needed.
  5. Garnish with fresh cilantro and serve hot with naan or rice.

Notes

Don’t skip the marinating step! It’s key for flavor absorption. Adjust the spiciness to your preference, and make it vegan by swapping the chicken for cauliflower or chickpeas.
