For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 lemon lemon, juiced
  • 2 cloves garlic, minced For enhanced flavor
Main Ingredients
  • 2 cups shredded chicken Use leftover rotisserie chicken for quick prep.
  • 1 cup cucumbers, diced Keep these separate until serving for crunch.
  • 1/2 cup red onion, finely chopped
  • Fresh herbs Fresh herbs (e.g., dill, parsley) Don’t skip the fresh herbs!
  • Salt and pepper to taste Season according to your preference.

Method
 

Preparation
  1. In a bowl, mix the Greek yogurt, lemon juice, and minced garlic to create the tzatziki sauce.
  2. In a separate bowl, combine the shredded chicken, diced cucumbers, red onion, and fresh herbs.
Assembly
  1. Add the tzatziki sauce to the chicken mixture and stir until everything is well coated.
  2. Season with salt and pepper to taste.
  3. Serve chilled as a salad or a side dish.

Notes

This salad keeps well in the fridge for about 3 days. For reheating, just pop it in the microwave if desired. For meal prep, mix everything but the cucumbers and store them separately until serving.
