Ingredients
  

Doughnut Base
  • 2 cups gluten free all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk (or dairy-free alternative)
  • 2 large eggs
  • 2 tablespoons melted butter (or dairy-free alternative)
Frying and Coating
  • as needed Vegetable oil for frying
  • as needed Cinnamon and sugar for coating

Method
 

Preparation
  1. In a mixing bowl, combine the gluten free flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, whisk together the milk, eggs, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
Frying
  1. Heat vegetable oil in a deep frying pan over medium heat.
  2. Using a piping bag or a spoon, carefully drop spoonfuls of the dough into the hot oil.
  3. Fry until golden brown on both sides, about 2-3 minutes.
  4. Remove the doughnuts from the oil and place them on a paper towel to drain excess oil.
  5. While still warm, toss the doughnuts in a mixture of cinnamon and sugar or your favorite topping.

Notes

Serve warm with coffee or hot cocoa. You can store in the fridge for about 2-3 days or freeze for up to a month. Reheat in the microwave or oven to maintain the crispy exterior.
