  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed peppermint candies

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the eggs, one at a time, and then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
  6. Gently fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
  7. Drop spoonfuls of dough onto ungreased cookie sheets.
Baking
  1. Bake for 10-12 minutes, or until golden around the edges.
  2. Let them cool on the sheets for a few minutes, then transfer to a wire rack.

Notes

Chill the dough for 30 minutes before baking for thicker, chewier cookies. Swap out brown sugar for coconut sugar for a hint of caramel flavor.
