Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the eggs, one at a time, and then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
- Gently fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
- Drop spoonfuls of dough onto ungreased cookie sheets.
Baking
- Bake for 10-12 minutes, or until golden around the edges.
- Let them cool on the sheets for a few minutes, then transfer to a wire rack.
Notes
Chill the dough for 30 minutes before baking for thicker, chewier cookies. Swap out brown sugar for coconut sugar for a hint of caramel flavor.
