  • 1 30-ounce bag frozen tater tots For best results, use a sturdy brand.
  • 1 cup shredded cheddar cheese Feel free to try other cheese varieties.
  • 8 large eggs
  • 2 cups milk Can substitute with almond milk or oat milk for a dairy-free option.
  • 1 teaspoon dry mustard
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the sausage in a skillet over medium heat until browned and cooked through. Drain excess fat.
  3. In a bowl, whisk together the eggs, milk, dry mustard, salt, and pepper until well blended.
  4. In a greased 9x13-inch casserole dish, layer the cooked sausage, then spread the frozen tater tots evenly on top.
  5. Pour the egg mixture over everything and sprinkle the cheddar cheese on top.
Cooking
  1. Bake for 45–50 minutes, or until the eggs are set and the tots are golden brown.
  2. Let it cool slightly before slicing into squares.

Notes

Serve warm, garnished with fresh herbs and paired with a fresh fruit bowl for added color. Optionally drizzle with hot sauce for extra flavor. Leftovers can be stored tightly covered in the refrigerator for up to 3-4 days or frozen for up to a month.
