Preparation
- Preheat your oven to 350ºF (177ºC).
- Cook the sausage in a skillet until fully cooked. Transfer to a paper towel-lined plate to drain the fat and slice into 1/2-inch pieces.
- Cook the bacon in the same skillet until crispy. Drain on a paper towel-lined plate and crumble.
- Arrange tater tots in a single layer in a 9x13 prepared baking dish.
Mixing
- Whisk together the eggs, milk, green onions, salt, and pepper.
- Stir in the cooked sausage and half of the bacon.
- Fold in 1 cup of Monterey jack cheese and 1 cup of cheddar cheese, then pour over the tater tots.
Baking
- Bake in the oven for about 40-45 minutes until set.
- Sprinkle with the remaining cup of cheddar cheese and bake for another 5-7 minutes until melted.
- Allow to cool for 10 minutes before cutting. Top with the remaining bacon and green onions to serve.
Notes
This casserole can be prepared the night before and baked in the morning for convenience. For extra flavor, serve with fresh fruit or toppings like sour cream or hot sauce. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2 months.
