  • 1/2 cup red onion, diced
  • 1 cup cooked quinoa or rice
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Optional: cheese, sour cream, or hot sauce for topping

Method
 

Preparation
  1. In a large bowl, combine the cooked chicken, corn, red bell pepper, avocado, cherry tomatoes, and red onion.
  2. Add the cooked quinoa or rice to the mixture and stir gently.
  3. Squeeze lime juice over the bowl and toss in the cilantro, mixing well.
  4. Season with salt and pepper to taste.
  5. Serve immediately, or refrigerate for meal prep.
  6. Optional: Top with cheese, sour cream, or hot sauce before serving.
