  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 2 cups corn (fresh or canned) Frozen corn is also a good option.
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 each avocado, diced Add just before serving to keep fresh.
  • 1 cup cooked rice (or quinoa) Quinoa can be swapped for brown rice.
  • 1/4 cup cilantro, chopped
  • 1 each lime, juiced Add more for extra flavor.
  • to taste salt and pepper

Method
 

Preparation
  1. In a large bowl, combine shredded chicken, corn, black beans, cherry tomatoes, and avocado.
  2. Add cooked rice or quinoa to the bowl.
  3. Squeeze lime juice over the mixture and season with salt and pepper.
  4. Toss everything together until well mixed.
  5. Garnish with chopped cilantro and add optional toppings if desired.
  6. Serve immediately or store in meal prep containers for later.

Notes

This dish keeps well in the fridge for about 3-4 days in an airtight container. You can freeze it for up to three months. Just thaw in the fridge and reheat in the microwave. For extra texture, toast your corn in a pan for a caramelized crunch.
