  • 1 cup mashed sweet potatoes Use leftover mashed sweet potatoes if available.
  • 1 cup almond milk (or any plant-based milk) Coconut milk is a great substitute for a tropical flavor.
  • 1 cup oat flour Can be substituted with regular or gluten-free flour.
  • 1 tablespoon baking powder
  • 1 tablespoon ground flaxseed
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 tablespoons maple syrup (optional) Skip for a lower sugar option.
  • Cooking oil for the waffle iron Use for greasing the waffle iron.

Preparation
  1. Preheat the waffle iron.
  2. In a large bowl, combine mashed sweet potatoes, almond milk, and maple syrup.
  3. In another bowl, mix oat flour, baking powder, ground flaxseed, cinnamon, and salt.
  4. Gradually combine the dry ingredients with the wet mixture until smooth.
  5. Lightly oil the waffle iron and pour batter to fill it.
  6. Cook according to waffle maker instructions until golden and crispy.
  7. Serve warm with toppings of your choice.

Notes

These waffles keep well for about 3-4 days in the fridge or up to three months in the freezer. Reheat in a toaster or waffle iron until heated through. For extra fluffiness, let the batter sit for a few minutes before cooking. You can also add chocolate chips or chopped nuts for more flavor.
