  • 16 oz ground beef
  • 2 pieces sweet potatoes, peeled and finely diced
  • 1/2 tsp cinnamon
  • 1 cup cottage cheese
  • 1 pieces avocado, pitted and diced
  • 1/2 pieces yellow onion, thinly sliced
  • 1 tbsp butter
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp honey
  • 2 tbsp hot honey (2 tbsp honey with ~1 tsp red pepper flakes)
Seasonings
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Method
 

Preparation
  1. Wash, peel, and finely dice the sweet potatoes. Toss them in a bowl with 1 tbsp avocado oil and seasonings like 1 tsp onion powder, 1 tsp garlic salt, 1/2 tsp paprika, and 1/2 tsp cinnamon. Air fry or bake at 400°F for 20 minutes until fork-tender.
  2. Slice the yellow onion thinly. In a small pan, add 1 tbsp butter, 1 tbsp Worcestershire sauce, and 1/2 tbsp honey. Cook over medium heat until the onions are tender and the liquid evaporates.
  3. Dice the avocado and set aside.
Cooking
  1. In a large pan, cook the ground beef over medium heat, seasoning with 1 tsp onion powder, 1 tsp garlic powder, and 1/2 tsp black pepper until browned, about 12-14 minutes.
Assembly
  1. Grab two dinner bowls and layer 1/2 cup sweet potato, 1/2 cup ground beef, 1/2 cup cottage cheese, half of the avocado, and half of the sautéed onions in each bowl. Drizzle with honey and sprinkle with red pepper flakes (or use hot honey).

Notes

Store leftovers in airtight containers for up to 3 days in the fridge, or freeze for up to 3 months. Reheat as needed. Customize by swapping beef for black beans or adding greens.
