  • 4 cloves Garlic Use crushed garlic for more flavor, or the powdered version to save time.
  • 1 cup Cottage Cheese Creamy and protein-rich; Greek yogurt can be used as a twist.
  • ¼ cup Hot Honey You can mix honey with chili flakes or cayenne if preferred.
  • 1 Avocado, sliced Adds a creamy finish; guacamole can also be a substitute.
  • 2 tablespoons Olive Oil For sautéing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into bite-sized chunks. Toss with olive oil, salt, and pepper.
Roasting the Sweet Potatoes
  1. Spread sweet potato cubes on a lined baking sheet. Roast for about 25 minutes, tossing halfway through.
Cooking the Ground Beef
  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add chopped onion and cook until translucent.
  2. Add minced garlic and the ground beef, breaking it apart as it cooks. Season with salt and pepper and cook for about 5-7 minutes.
Making the Hot Honey
  1. In a small bowl, mix honey with chili flakes or cayenne. Adjust spice level to your liking.
Assembly
  1. Layer roasted sweet potatoes as the base in a bowl, followed by the seasoned ground beef, a scoop of cottage cheese, drizzle with hot honey, and top with sliced avocado.

Notes

To store leftovers, keep in an airtight container in the fridge for 3-4 days. Reheat gently for best texture. For vegan options, substitute ground beef with black beans or lentils and skip cottage cheese.
