Dough Ingredients
  • 200 g Almond flour Use fine almond flour for best texture.
  • 2 pieces Eggs Regular eggs or flax eggs for a vegan option.
  • 60 g Greek yogurt Can substitute with any yogurt variant.
  • 1 tsp Baking powder
  • 40 g Butter, softened Warm butter spreads more easily.
  • 2 tbsp Powdered erythritol Use more or less to taste.
  • 1 tbsp Cinnamon

Method
 

Preparation
  1. Preheat your oven to 180°C / 355°F.
  2. Mix the dough ingredients together until you form a pliable dough.
  3. Roll the dough out between two sheets of parchment paper.
  4. Spread the softened butter over the dough surface.
  5. Sprinkle evenly with the powdered erythritol and cinnamon.
  6. Roll the dough tightly into a log shape and slice it into rolls.
  7. Bake the rolls for 18 to 22 minutes until done.
  8. Let them cool for 10 minutes before serving.

Notes

These rolls can be stored in an airtight container for up to 5 days in the fridge. For longer storage, freeze them and reheat before serving.
