  • 1 box cake mix (strawberry flavor) Use any flavored cake mix for variation.
  • 1/2 cup vegetable oil Can substitute with melted butter for richer flavor.
  • 2 large eggs Can swap for flax eggs to make vegan.
  • 1/2 cup dark chocolate chips For a deeper chocolate flavor.
  • 1/2 cup white chocolate chips Adds sweetness and contrast to the cookies.
  • 1/2 cup strawberries, chopped Optional; can substitute with raspberries or blueberries.
  • powdered sugar for dusting Optional for serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cake mix, vegetable oil, and eggs until well combined.
  3. Stir in the dark and white chocolate chips and chopped strawberries if using.
  4. Drop spoonfuls of the dough onto a lined baking sheet, spacing about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow to cool for a few minutes before transferring to a wire rack.
  3. Dust with powdered sugar before serving, if desired.

Notes

These cookies can be stored in an airtight container at room temperature for about 3-5 days, or frozen for up to 3 months. For chewier cookies, do not overmix the dough.
