  • 6 pieces chicken thighs, boneless, skin on
  • 2 cloves garlic, grated Use a microplane for fine grating.
  • 3 stalks green onions White and green parts separated.
Marinade Ingredients
  • 2 tbsp gochujang paste
  • 2 tbsp honey
  • 3 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil

Method
 

Preparation
  1. Debone the chicken thighs if they have bones, ensuring they are boneless for easy eating.
  2. Combine the gochujang paste, honey, rice vinegar, soy sauce, and sesame oil in a bowl.
  3. Toss in the grated garlic and the whites of the green onions, then mix thoroughly.
  4. Place the chicken thighs in the marinade. Cover and let it marinate for at least 30 minutes.
Cooking
  1. Cook the chicken by grilling, baking, or sautéing until it is beautifully caramelized and cooked through.

Notes

For a crispier exterior, broil the chicken for the last few minutes of cooking. Leftovers can be stored in the fridge for up to 4 days or frozen for about a month.
