  • 1/2 cup sour cream Use plant-based for a vegan version.
  • 1/4 cup fresh cilantro, chopped For the sauce, plus extra for garnish.
  • 1 each lime (juice) Add more for extra flavor.
  • to taste salt and pepper For seasoning.
  • as needed tbsp olive oil For cooking the steak.

Preparation
  1. Cook the quinoa according to package instructions.
  2. Season the steak with salt and pepper, then grill or sear it to your desired doneness. Let it rest before slicing.
Cilantro Cream Sauce
  1. In a bowl, mix sour cream, chopped cilantro, lime juice, salt, and pepper to make the cilantro cream sauce.
Assembly
  1. Assemble the bowl by placing quinoa at the bottom, topping it with sliced steak, diced avocado, and roasted corn.
  2. Drizzle with cilantro cream sauce before serving.

Notes

For best flavor, allow the dish to sit for a few minutes before serving. Leftovers can be stored for up to 3 days; keep the cilantro cream sauce separate.
