Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat a splash of olive oil and sauté the minced garlic until aromatic.
- Add the spinach and cook until wilted. Remove from heat and let cool.
- Stir in cream cheese and mozzarella until combined and creamy.
- Using a sharp knife, make a pocket in each chicken breast. Season with salt and pepper.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks.
- Place the stuffed breasts in a baking dish and drizzle with a little olive oil.
Cooking
- Bake for about 25-30 minutes until the chicken is cooked through.
