  • 2 tablespoons oil Vegetable or cooking oil.
  • 4 cloves garlic, minced Freshly minced garlic is best.
  • 1 onion, chopped Any onion variety works.
  • 1 bell pepper, chopped Any color bell pepper.
  • 1 carrot, chopped Fresh carrots add crunch.
  • 1 cup mixed vegetables (peas, corn, etc.) Frozen mixed vegetables can be used.
  • 2 tablespoons curry powder Adjust for spice preference.
  • 1 teaspoon chili powder Use more or less as desired.
  • to taste Salt Season to preference.
  • 2 tablespoons soy sauce Use a plant-based alternative for vegan dish.
  • to garnish Fresh coriander Adds freshness and color.

Method
 

Preparation
  1. Cook the macaroni pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat oil over medium heat. Add minced garlic and chopped onion. Sauté until translucent.
Cooking
  1. Add chopped bell pepper and carrot. Cook until softened.
  2. Stir in mixed vegetables and cook for an additional 2-3 minutes.
  3. Add curry powder, chili powder, and salt. Mix well to combine.
  4. Add the cooked macaroni to the pan and pour in soy sauce. Toss everything together until well coated.
  5. Garnish with fresh coriander and serve hot.

Notes

Use fresh vegetables for the best texture and flavor. Adjust spice levels to suit your taste. This dish is perfect for meal prep and can be stored in the fridge for 3-4 days or frozen for up to 3 months.
