Ingredients
  

Main Ingredients
  • 2 cups Grilled chicken, sliced Cooked and sliced before adding to the salad.
  • 1 can Black beans Drained and rinsed.
  • 1 cup Sweet corn Can be canned or frozen.
  • 4 cups Romaine lettuce, chopped Fresh and chopped.
  • 1 medium Avocado, diced Fresh and ripe.
  • 1 cup Cherry tomatoes, halved Fresh and halved.
Dressing
  • 1/2 cup Chipotle-lime dressing Store-bought or homemade.

Method
 

Preparation
  1. Grill the chicken until cooked through, then slice it.
  2. In a large bowl, combine the sliced chicken, black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
  3. Drizzle with chipotle-lime dressing and toss gently to combine.
  4. Serve immediately or store in the refrigerator for meal prep.

Notes

For storage, keep the dressing separate if you plan to store it for a few days. To make it vegan, replace the grilled chicken with grilled tofu or tempeh.
