Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flour, sugar, and salt together.
- Add the softened butter and vanilla, then mix until creamy.
- Beat in the egg until everything is fully combined.
- Chill the dough in the refrigerator for about 30 minutes.
Baking
- Roll out the chilled dough on a lightly floured surface and cut out shapes, leaving an 'opening' on half for that classic Linzer look.
- Bake for 10-12 minutes until the edges turn golden.
- Let them cool before spreading jam on the bases and topping with the cut-out cookies.
- Finish with a generous dusting of powdered sugar.
Notes
To keep cookies soft, underbake slightly as they will continue to firm up as they cool. Store in an airtight container for up to a week.
