Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 1 cup unsalted butter, softened Make sure it's softened for easy mixing.
  • ¼ teaspoon salt
  • 1 large egg
For Dusting and Filling
  • 1 cup powdered sugar For dusting before serving.
  • ½ cup jam Choose your favorite flavor like raspberry or apricot.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, sugar, and salt together.
  3. Add the softened butter and vanilla, then mix until creamy.
  4. Beat in the egg until everything is fully combined.
  5. Chill the dough in the refrigerator for about 30 minutes.
Baking
  1. Roll out the chilled dough on a lightly floured surface and cut out shapes, leaving an 'opening' on half for that classic Linzer look.
  2. Bake for 10-12 minutes until the edges turn golden.
  3. Let them cool before spreading jam on the bases and topping with the cut-out cookies.
  4. Finish with a generous dusting of powdered sugar.

Notes

To keep cookies soft, underbake slightly as they will continue to firm up as they cool. Store in an airtight container for up to a week.
