- In a mixing bowl, beat together 4 tablespoons of softened unsalted butter, ⅓ cup of packed brown sugar, 1½ tablespoons of all-purpose flour, 2½ teaspoons of ground cinnamon, and a pinch of salt until creamy.
- In another bowl, combine 1 cup of unsalted butter (softened but cool) and 1⅓ cups of granulated sugar. Mix until smooth!
- Add in 1¾ teaspoons of pure vanilla extract, 1 large egg, and 1 large egg yolk. Blend them into the mixture.
- Gradually mix in 2¾ cups of all-purpose flour, ¾ teaspoon of baking powder, 1 teaspoon of cornstarch, and ¼ teaspoon of salt.
- Gently fold in your cinnamon-sugar mixture from step one into the dough.
- Chill the dough for 30 minutes, then scoop and roll into balls.
- Bake at 350°F (175°C) for 10-12 minutes until the edges are just golden.
Notes
For best texture, ensure butter is softened but cool. Don't skip the chilling step to maintain the chewy center. Experiment with chopped nuts or dried fruit for added variety, and consider plant-based substitutes for a vegan version.
