Ingredients
  

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup sour cream Use full-fat for a creamier sauce.
  • 3/4 cup grated Parmesan cheese Divided - 1/2 cup for the mixture and the rest for topping.
  • 4 slices mozzarella cheese Or swap for a mix of cheddar and Monterey Jack.
  • 1 tbsp cornstarch
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • to taste Salt and black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13-inch baking dish.
  3. Lay the chicken breasts in the dish.
Mixing Sauce
  1. In a bowl, mix together the sour cream, 1/2 cup Parmesan cheese, cornstarch, oregano, garlic powder, salt, and pepper.
Baking
  1. Top each chicken breast with a slice of mozzarella cheese.
  2. Spread the sour cream mixture over the chicken and sprinkle with the remaining Parmesan cheese.
  3. Bake for about 60 minutes, until the chicken is cooked through and the cheese is golden.
  4. Allow to rest for a moment before serving.

Notes

Brining the chicken in salted water for a couple of hours can make it incredibly juicy. For a Mediterranean twist, add diced sun-dried tomatoes and spinach to the mixture.
