  • 4 large Tortillas
  • 1 lb Ground beef
  • 1 cup Cheese (like cheddar or Monterey Jack) Choose a cheese that melts well.
  • 1 Onion, diced For additional flavor.
  • 1/2 cup Pickles, sliced
  • 2 tbsp Ketchup
  • 1 tbsp Mustard
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Olive oil For cooking.

Method
 

Preparation
  1. In a skillet over medium heat, add olive oil and cook the ground beef with diced onions until browned. Season with salt and pepper.
  2. On one half of each tortilla, layer the cooked beef, cheese, pickles, ketchup, and mustard.
  3. Fold the tortilla in half to cover the filling.
Cooking
  1. In the skillet, cook each folded quesadilla for about 3-4 minutes on each side or until golden brown and the cheese is melted.
  2. Cut into wedges and serve hot.

Notes

Serve with a side of spicy salsa or a creamy dipping sauce. Consider garnishing with fresh cilantro for added flavor.
