Preparation
- Preheat your air fryer to 400°F.
- Toss diced potatoes with olive oil, salt, and pepper.
- Air fry for 16–18 minutes, shaking halfway, until golden and crispy.
- In a skillet over medium-low, heat a splash of olive oil.
- Add diced onions and cook for about 10–15 minutes until soft and golden.
- Remove onions and set aside.
- In the same skillet, increase heat to medium-high.
- Add ground beef, breaking it up and pressing into the pan to create crispy edges.
- Cook for about 5–7 minutes until browned, and season with salt and pepper. Drain excess fat if necessary.
Assembly
- In a small bowl, whisk together mayonnaise, ketchup, mustard, and Cajun seasoning until smooth.
- Add crispy potatoes to bowls, top with beef, caramelized onions, and shredded cheese.
- Drizzle with the sauce and finish with lettuce and optional toppings.
Notes
To make it vegan, replace ground beef with lentils or black beans, and use vegan mayo and cheese. For extra crispy potatoes, parboil before air frying.
