Preparation
- Place the chicken in your slow cooker.
- Add the corn on top.
- Stir in cream cheese and half the Cotija cheese.
- Squeeze in lime juice and add minced garlic, chili powder, smoked paprika, and onion powder.
- Mix until combined and top with remaining Cotija cheese.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
Notes
Leftovers keep well in the fridge for up to 4 days and can be frozen for about 2 months. Thaw in the fridge overnight and reheat gently.
