Main Ingredients
  • 1 lb Boneless Chicken Breasts/Thighs Thighs for richer flavor; breasts for a leaner option.
  • 2 cups Corn Fresh grilled, frozen, or canned corn.
  • 4 oz Cream Cheese Can use vegan alternatives like Tofutti or Kite Hill.
  • 1/3 cup Cotija Cheese Feta works as a substitute.
  • 1 each Lime Juice from freshly squeezed preferred.
  • 2 cloves Garlic Minced; jarred can be used.
Seasonings
  • 1/2 tsp Chili Powder Chipotle or cayenne can be used for more heat.
  • 1/2 tsp Smoked Paprika Adds smokiness.
  • 1/2 tsp Onion Powder
  • to taste Fresh Cilantro Optional for garnish.

Method
 

Preparation
  1. Place the chicken in your slow cooker.
  2. Add the corn on top.
  3. Stir in cream cheese and half the Cotija cheese.
  4. Squeeze in lime juice and add minced garlic, chili powder, smoked paprika, and onion powder.
  5. Mix until combined and top with remaining Cotija cheese.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.

Notes

Leftovers keep well in the fridge for up to 4 days and can be frozen for about 2 months. Thaw in the fridge overnight and reheat gently.
