  • 1 can (20 ounces) pineapple chunks in juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 onion sliced
  • Salt and pepper to taste
  • Cooked rice for serving

Preparation
  1. Place the pork shoulder in the slow cooker.
  2. In a bowl, mix together pineapple chunks (with juice), soy sauce, brown sugar, garlic, ginger, and onion.
  3. Pour the mixture over the pork.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the pork is tender.
  2. Once cooked, shred the pork with two forks and mix it back into the sauce.
  3. Season with salt and pepper to taste.
  4. Serve over cooked rice or with your favorite sides.

Notes

For extra flavor, consider marinating the pork for a few hours or overnight in the sauce. Add bell peppers or carrots for color and nutrition, and garnish with fresh cilantro or green onions.
