  • 4 pieces chicken thighs
  • 2 tablespoons jerk seasoning
  • 1 tablespoon allspice
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • 1 piece onion, chopped
  • 1 piece bell pepper, chopped
  • 1 cup chicken broth
  • 1 tablespoon brown sugar
  • to taste Salt and pepper
For Serving

Method
 

Preparation
  1. In a bowl, mix together jerk seasoning, allspice, thyme, garlic, onion, bell pepper, and brown sugar.
  2. Rub the mixture all over the chicken thighs.
  3. Place the seasoned chicken in the slow cooker and pour in the chicken broth.
  4. Season with salt and pepper to taste.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  2. Serve over rice and peas.

Notes

For best results, marinate the chicken overnight. Consider adding Scotch bonnet peppers for extra heat. You can also swap chicken for firm tofu or jackfruit for a vegan option.
