Slow Cooker Greek Chicken

Ingredients
  

Main Ingredients
  • 2 lbs boneless skinless chicken breast or thighs Thighs are recommended for extra juiciness.
  • 1 large onion, thinly sliced
  • ¼ cup chicken broth Can substitute with vegetable broth.
  • 1 large lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 ½ teaspoons dried oregano Feel free to customize the herbs.
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Method
 

Preparation
  1. Place the chicken in the bottom of the slow cooker.
  2. Add the thinly sliced onion on top of the chicken.
  3. In a small bowl, whisk together the chicken broth, lemon juice, garlic, olive oil, oregano, thyme, sea salt, and pepper. Pour the mixture evenly over the chicken and onions in the slow cooker.
  4. Put the lid on the slow cooker and cook on LOW for 5-6 hours or HIGH for 3-4 hours until the chicken is tender (internal temperature should reach 165°F/75°C).
  5. Once cooked, shred the chicken with two forks right in the slow cooker so it can soak up the juices. Serve warm with rice, pasta, pita, or on top of a Greek salad!

Notes

For extra flavor, marinate chicken in broth mixture overnight. Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for up to three months.
