Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 medium onion, diced
  • 1/4 cup water
  • 1 Tablespoon olive oil
  • 2 Tablespoons red wine vinegar
  • 1 teaspoon oregano
  • 1/4 teaspoon allspice
  • 1 teaspoon lemon pepper
For the Tzatziki Sauce
  • 1 cup fat-free plain Greek yogurt
  • 2 cloves garlic, minced
  • 1/2 cup grated cucumber
  • 2 Tablespoons chopped fresh parsley
  • to taste Salt

Method
 

Preparation
  1. Spray the slow cooker with nonstick cooking spray and place the chicken breasts inside.
  2. In a bowl, combine the minced garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper.
  3. Pour the mixture over the chicken breasts.
Cooking
  1. Cover and cook on HIGH for 3-4 hours or on LOW for 6-8 hours.
Tzatziki Preparation
  1. While the chicken cooks, prepare the tzatziki sauce by mixing all its ingredients in a bowl. Cover and refrigerate for at least 1 hour.
Serving
  1. Once the chicken is done, shred it in the slow cooker using two forks.
  2. Enjoy the shredded chicken with warm pocketless pita bread, sliced tomatoes, onions, cucumbers, lettuce, and the tzatziki sauce.

Notes

Use bone-in chicken for extra flavor or let your chicken marinate overnight for deeper taste. Be generous with seasoning, especially in the tzatziki. Consider replacing oregano with dill for a fresh variation. For a vegan twist, substitute chicken with chickpeas or jackfruit.
