Preparation
- Spray the slow cooker with nonstick cooking spray and place the chicken breasts inside.
- In a bowl, combine the minced garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper.
- Pour the mixture over the chicken breasts.
Cooking
- Cover and cook on HIGH for 3-4 hours or on LOW for 6-8 hours.
Tzatziki Preparation
- While the chicken cooks, prepare the tzatziki sauce by mixing all its ingredients in a bowl. Cover and refrigerate for at least 1 hour.
Serving
- Once the chicken is done, shred it in the slow cooker using two forks.
- Enjoy the shredded chicken with warm pocketless pita bread, sliced tomatoes, onions, cucumbers, lettuce, and the tzatziki sauce.
Notes
Use bone-in chicken for extra flavor or let your chicken marinate overnight for deeper taste. Be generous with seasoning, especially in the tzatziki. Consider replacing oregano with dill for a fresh variation. For a vegan twist, substitute chicken with chickpeas or jackfruit.
