  • 1 cup mozzarella balls Small mozzarella balls for the eyeballs.
  • 1 medium red bell pepper For decoration, cut into wedge shapes.
  • 2 tablespoons kalamata olives Finely chopped to create the 'eyes' for the mozzarella.
  • 4 ounces pepperoni stick Cut into pieces and strips.

Preparation
  1. Use a sharp knife to cut small indents in the mozzarella balls and set them aside.
  2. Finely chop the kalamata olives and place them into the indents on the mozzarella balls to create the 'eyes.'
  3. Cut the pepperoni stick into small pieces about 3/4 inch long, and also into thin slices about 1/4 to 1/2 inch thick.
  4. Slice the red bell pepper into small wedge-shaped pieces for decoration.
Assembly
  1. Thread a piece of red bell pepper, followed by a chunk of pepperoni, and then the mozzarella ball with the olive 'eye.'
  2. For the base of the skewer, place a few thin slices of pepperoni followed by another mozzarella ball to stabilize.
  3. Refrigerate before serving on a Halloween-themed platter.
