Simple Cold Street Corn Dip

Ingredients
  

Base Ingredients
  • 2 cups cooked corn (fresh or frozen)
  • 1 cup cream cheese (softened)
  • 1/2 cup sour cream Softened
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese (or feta cheese if you're out)
  • 1/4 cup fresh cilantro (chopped)
Flavor Enhancers
  • 1-2 tablespoons lime juice To taste
  • 1 teaspoon chili powder
  • Salt and pepper To taste

Method
 

Preparation
  1. In a large bowl, combine the cream cheese, sour cream, and mayonnaise. Mix until smooth.
  2. Stir in the cooked corn, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper.
  3. Mix everything together until nicely blended.
  4. Chill in the refrigerator for at least 30 minutes to let those flavors mingle.
  5. Serve with tortilla chips, veggies, or simply dig in with a spoon!

Notes

Serve in a bright bowl and garnish with extra cilantro. Keeps for 3-4 days in the fridge if tightly covered. Not recommended for freezing.
