- In a large bowl, combine the cream cheese, sour cream, and mayonnaise. Mix until smooth.
- Stir in the cooked corn, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper.
- Mix everything together until nicely blended.
- Chill in the refrigerator for at least 30 minutes to let those flavors mingle.
- Serve with tortilla chips, veggies, or simply dig in with a spoon!
Notes
Serve in a bright bowl and garnish with extra cilantro. Keeps for 3-4 days in the fridge if tightly covered. Not recommended for freezing.
