- Preheat your oven to 400°F (200°C).
- In a large skillet, cook the ground beef over medium heat until browned; drain off any excess fat.
- Add the chopped onion and minced garlic to the skillet; cook until softened, about 3-4 minutes.
- Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, and season with salt and pepper. Simmer for 5-7 minutes until slightly thickened.
- Transfer the beef mixture to a casserole dish, spreading it evenly.
- Top with your prepared mashed potatoes, covering the filling completely.
- Dot with butter and sprinkle with shredded cheddar cheese if using.
- Bake in the preheated oven for 20-30 minutes until the top is golden and bubbly.
- Let cool for 5 minutes before serving.
Notes
Leftovers can be stored in the fridge for up to 3-4 days in an airtight container. Assemble the casserole, cover it tightly, and freeze it for up to 3 months.
