- Heat a skillet over medium-high heat and brown the ground beef until well-cooked, about 5-7 minutes.
- Add diced red potatoes to the skillet, cooking until they're tender (around 10 minutes). Stir occasionally to prevent sticking.
- Toss in the onions and cook until caramelized, about 7 minutes.
- Stir in the Cajun seasoning, ketchup, and mustard, mixing it all together.
- Remove the skillet from heat and fold in the mayo.
- Top with your shredded cheese, letting it melt slightly.
- Serve it over a bed of lettuce and finish with a sprinkle of pickles.
Notes
For best flavor, don’t rush the onions as caramelizing them adds depth. Store leftovers in the fridge for 3-4 days in an airtight container or freeze for up to a month.
