  • 1 cup Onions (Caramelized for added depth)
  • 1 cup Shredded Cheese (Colby Jack or pepper jack recommended)
  • 1/2 cup Mayo (Adjust for desired creaminess)
  • 2 tbsp Ketchup (Use low-sugar for a healthier option)
  • 1 tbsp Mustard (Dijon is a great choice)
  • 1 tbsp Cajun Seasoning (Adjust to taste)
  • 1/2 cup Pickles (Adds crunch)
  • 1 cup Lettuce (Any leafy greens work)

Method
 

Cooking Instructions
  1. Heat a skillet over medium-high heat and brown the ground beef until well-cooked, about 5-7 minutes.
  2. Add diced red potatoes to the skillet, cooking until they're tender (around 10 minutes). Stir occasionally to prevent sticking.
  3. Toss in the onions and cook until caramelized, about 7 minutes.
  4. Stir in the Cajun seasoning, ketchup, and mustard, mixing it all together.
  5. Remove the skillet from heat and fold in the mayo.
  6. Top with your shredded cheese, letting it melt slightly.
  7. Serve it over a bed of lettuce and finish with a sprinkle of pickles.

Notes

For best flavor, don’t rush the onions as caramelizing them adds depth. Store leftovers in the fridge for 3-4 days in an airtight container or freeze for up to a month.
