  • 1 lb sausage Cooked and drained
  • 30 oz frozen hash browns
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 12 large eggs
  • 1 cup milk
  • Salt and pepper To taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the sausage over medium heat until browned; drain excess fat.
  3. In a large bowl, combine cooked sausage, hash browns, cheddar cheese, onion, and bell pepper.
  4. In another bowl, whisk together eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the sausage and hash brown mixture and gently stir to combine.
  6. Transfer the mixture to a greased 9×13 inch baking dish.
Baking
  1. Bake for 45-55 minutes, or until the eggs are set and the top is golden.
  2. Let cool for a few minutes before serving.

Notes

You can store leftovers in the fridge for up to 4 days or freeze for up to 3 months. Try using turkey sausage for a lighter option or add extra veggies for more nutrition.
