Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the sausage over medium heat until browned; drain excess fat.
- In a large bowl, combine cooked sausage, hash browns, cheddar cheese, onion, and bell pepper.
- In another bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture over the sausage and hash brown mixture and gently stir to combine.
- Transfer the mixture to a greased 9×13 inch baking dish.
Baking
- Bake for 45-55 minutes, or until the eggs are set and the top is golden.
- Let cool for a few minutes before serving.
Notes
You can store leftovers in the fridge for up to 4 days or freeze for up to 3 months. Try using turkey sausage for a lighter option or add extra veggies for more nutrition.
