Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the sausage over medium heat until browned, then drain excess fat.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper.
  4. In a greased baking dish, layer the cooked sausage, followed by any optional bread or vegetables. Then pour the egg mixture over the top.
  5. Sprinkle cheese on top.
  6. Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
  7. Let it cool for a few minutes before serving.

Notes

This casserole stays fresh for about 3-4 days in the fridge. If you want to keep it longer, pop it in the freezer for up to a month. Reheat in the oven for the best texture. Variations include using different types of sausage or adding in additional vegetables like spinach or bell peppers.
