Stuffed Chicken Ingredients
  • 2 pieces boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket in each chicken breast and stuff with the cheese mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
Serving
  1. Let the chicken rest for a few minutes before slicing and serving.

Notes

Leftovers can be kept in the fridge for 3-4 days or frozen for 2-3 months. Reheating in the oven is recommended to keep it juicy.
