Preparation
- Preheat your oven to 425°F (220°C).
 - In a large mixing bowl, combine the sweet potato cubes with olive oil, honey, ground cinnamon, and salt. Toss well to ensure the sweet potatoes are evenly coated.
 - Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper. Do not overcrowd them.
 
Cooking
- Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring halfway through for even cooking.
 - Once roasted, remove them from the oven and transfer them to a serving dish. Sprinkle with chopped fresh parsley.
 
Notes
Optionally, add crushed pecans or walnuts during the last five minutes of roasting for extra crunch. Leftovers can be stored in an airtight container in the fridge for 3-5 days. Reheat to regain crispiness.
