Preparation
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into 1/2-inch rounds.
- In a bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Spread the rounds out on a baking sheet in a single layer.
Cooking
- Roast in the oven for about 20-25 minutes, flipping halfway, until golden and tender.
- Remove the sweet potatoes, then sprinkle the feta cheese on top.
- Drizzle with honey and return to the oven for an additional 5 minutes.
- Garnish with parsley before serving.
Notes
Store leftovers in an airtight container in the fridge for about 3-5 days. Reheat in the oven for 10 minutes at 350°F (175°C).
