  • 2 large Sweet Potatoes Cut into 1/2-inch rounds
  • 2 tablespoons Olive Oil Extra virgin recommended
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika Omit if preferred
  • 1 cup Feta Cheese Goat cheese can be substituted
  • 2 tablespoons Honey Maple syrup can be used
  • 2 tablespoons Parsley Freshly chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/2-inch rounds.
  3. In a bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
  4. Spread the rounds out on a baking sheet in a single layer.
Cooking
  1. Roast in the oven for about 20-25 minutes, flipping halfway, until golden and tender.
  2. Remove the sweet potatoes, then sprinkle the feta cheese on top.
  3. Drizzle with honey and return to the oven for an additional 5 minutes.
  4. Garnish with parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for about 3-5 days. Reheat in the oven for 10 minutes at 350°F (175°C).
