  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika omit if preferred
  • 1 cup Feta Cheese goat cheese can be substituted
  • 2 tablespoons Honey maple syrup can be used
  • 2 tablespoons Parsley freshly chopped

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into ½-inch rounds for even roasting.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, pepper, and smoked paprika until coated.
  4. Spread the rounds in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Roast for 25-30 minutes, flipping halfway, until tender and golden-brown.
  2. Drizzle the honey over the roasted rounds, and sprinkle crumbled feta and chopped parsley on top just before serving.

Notes

Tips: Ensure uniform slices for even cooking. Skip the foil and use parchment paper for easy cleanup. Experiment with different cheeses and add spices like chili flakes or cinnamon for extra flavor. These rounds can be made vegan by omitting the cheese and drizzling with balsamic glaze.
