Ingredients
  

For the Sweet Potato Rounds
  • 2 large sweet potatoes, washed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ¾ cup crumbled feta cheese
  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into ½-inch thick rounds.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
  4. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
Cooking
  1. Roast in the preheated oven for 25-30 minutes, turning halfway through, until they are tender and golden brown.
  2. Remove from the oven and allow to cool slightly.
Garnishing
  1. Arrange the roasted sweet potato rounds on a serving platter.
  2. Sprinkle crumbled feta cheese over the top of the sweet potatoes.
  3. Drizzle with honey and garnish with freshly chopped parsley.
  4. Serve warm or at room temperature.

Notes

Store any leftovers in an airtight container in the fridge for about 2-3 days. Reheat in the oven for the best texture.
