  • 2 medium summer squash (zucchini and/or yellow squash)
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
  • 1/2 cup grated Parmesan cheese
  • for garnish Fresh herbs (such as basil or thyme)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the summer squash into 1/4-inch thick rounds.
  3. In a large bowl, toss the squash with olive oil, salt, and pepper until evenly coated.
  4. Arrange the squash on a baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for 15-20 minutes until tender and slightly golden.
  2. Remove from the oven and sprinkle with grated Parmesan cheese.
  3. Return to the oven for an additional 5 minutes until the cheese is melted.
Serving
  1. Serve warm, garnished with fresh herbs.

Notes

Keep an eye on the cheese while roasting to avoid burning. For added flavor, try sprinkling red pepper flakes before roasting.
